Zero-Proof Cocktails in Asheville

Handcrafted herbal cocktails made with medicinal plants for pleasure, nourishment, and deep satiation, not a placeholder for alcohol, a celebration of plants on their own terms.

Asheville built its reputation as a beer town, but the way the city drinks is changing. Plant Bar pours a full lineup of herbal zero-proof cocktails, MerTails and elixirs crafted in collaboration with The NOHM Collective, so the people who don't want alcohol still get a real evening at the bar.

Every drink starts with a feeling. Hydration, stimulation, relaxation, exhalation, circulation. Tell the herb-tender what you're after and they'll walk you through the menu, ask the kind of questions a thoughtful bartender should ask, and pour you something that actually does something. Sober-curious, fully sober, pregnant, on medication, or just out for a clear morning, you're taken seriously here.

MerTails, elixirs, and a different kind of bar

Our MerTails are the full NOHM Collective lineup, five herbal zero-proof cocktails, each one a synergistic blend of organic herbs, adaptogens, and pressed juice designed to support a different feeling. Hydration MerTini for clean restoration. Relaxation MerGarita to settle the nervous system. Exhalation MerJito to breathe a little deeper. Order short or tall, or take a bottle of concentrate home to mix into whatever you're already drinking, with or without alcohol.

Alongside the MerTails sits our elixir menu, herb-focused potions rooted in locally, ethically, and organically sourced ingredients. Some are classics reimagined, some are entirely our own. All of them are crafted with the same NOHM partnership and the same belief that a great drink can be genuinely nourishing.

We don't believe herbs are one-size-fits-all, so the bar is conversational by design. Our herb-tenders are trained to ask, to listen, and to help you land on something that fits your constitution and your craving. Ask the questions. That's the point.

Where to drink it

Where to choose your mood

Both Asheville rooms pour the full MerTail and elixir menu. South Slope is the easiest stop for a stirred drink between brewery visits or after dinner downtown, bright by day, slower and warmer once evening service rolls in.

West Asheville on Haywood Road is the fuller experience, a proper lounge with sofas, a back garden, live music on weekends, and the kind of unhurried evening the neighborhood's sober-curious community has been waiting for.

FAQ

Frequently asked about zero-proof bar in Asheville

What is a MerTail?
MerTails are herbal zero-proof cocktails crafted by The NOHM Collective and poured exclusively at Plant Bar. Each one is centered on a feeling, Hydration, Stimulation, Relaxation, Exhalation, Circulation, using organic medicinal herbs, adaptogens, and pressed juice. They're a celebration of plants, not a placeholder for alcohol.
How do I choose my mood?
Tell your herb-tender how you want to feel, clearer, calmer, more awake, more grounded, and they'll guide you to the right MerTail or elixir. Every body is different, so the conversation is part of the experience. Ask the questions; that's what we're here for.
What's the difference between a MerTail and an elixir?
MerTails are our cocktail-style pours from the NOHM Collective lineup. Elixirs are our wider menu of herb-focused potions, some classics reimagined, some entirely our own, rooted in locally, ethically, and organically sourced ingredients. Both are zero-proof, both are designed to nourish.
Can I take a MerTail home?
Yes. We sell bottles of MerTail concentrate at the bar so you can pour them into sparkling water, juice, or, if you're so inclined, your favorite spirit. Same herbs, your kitchen.
Can I bring friends who drink alcohol?
Everyone is welcome. Plant Bar is alcohol-free, which means the whole table is on equal footing, and the drinks are good enough that nobody feels they're missing out.
Are MerTails safe if I'm pregnant or on medication?
MerTails are made with herbs, and herbs are real ingredients with real effects. Tell your herb-tender what you need to avoid and they'll steer you to something that suits you. When in doubt, check with your provider.
